One hit wonder?

I did a great bearnaise sauce the other day, first time and it turned out perfect! I'm a bit scared of doing sauces, it's just bound to fail... So I did again last night, super excited...and the gosh darn sauce fell apart! The eggs got too warm in the water bath, there was no turning back after that:(. Trying this again next week, it can't be a one hit wonder.

It started out so well wit the onion...
